                Goals work for me. I have an event this summer I want to be in better physical shape for so I have the stamina to enjoy it and do it better. My motivation is really high right now. I think mentally you have to “be there” for it to work. At least that’s me.

                Baked them yesterday and really turned out well! Tonight I sliced leftover pork loin and sautéed it with Worcestershire, minced garlic and Montreal steak seasoning - baked just to melt the pepper jack cheese. 😋

                What time is your last coffee? I used to drink coffee all day but on low carb I can’t have it past 2-3 or I’m up all hours. Have you tried relaxing teas at night? Turning off lights when the sun goes down and keeping the house pretty dark at night? No screens after a certain hour? I’ve done all these with some success.…

                The recipe said it made 12, but I found nine to be the actual number. So that’s how I entered it, and how I plan to make it in the future. Full recipe at link (only I only used egg whites, no yokes, as advised to get rid of the eggy flavor), but entered as nine servings.

                Yep. I don’t gain on carbs above my start weight. Which is weird. But I do gain back all my losses and then no matter what I eat I stay there. I mean I ate JUNK the past few months and as much as I wanted and didn’t gain an ounce. Only problem is I need to lose 100 pounds!

                I think it depends on your body and metabolism. I was 80-100 carbs for six months and didn’t lose a pound. I finally gave up, I only lose on 20-30 carbs but I have thyroid issues and a really sluggish metabolism. You have to find what works for you.

                Making a Spinach Egg Bake with what I think is the perfect cheese for it - queso fresco! I’ll post a pic if I can. Basically sautéed onions in butter, lots of spinach, lots of sprigs of thyme, eggs, a little milk, and the cheese - baked.
