I usually prep some kind of vegetable soup on the weekends to eat off of all week. Easy, tasty, low-calorie. However, that coupled with my usual jello cup as a snack and oatmeal for breakfast does get me roasted at work for eating "hospital food" :D

I never buy milk (beyond gross) and switch between soy, cashew, and oat milk. I have never had a problem subbing soy or cashew for regular milk in a recipe (and only get the chocolate oat milk bc its so darn good!)

It's not just veggies, but I like making green pasta salad with pearl couscous, peas, chopped broccoli, spinach, and pesto. Super easy and super good (and super green!)

Thursday seems like the day to say yes! Today I made a huge pot of Moroccan lentil orzo soup (so amazing!) and got a "goth oreo" from the new vegan bakery down the road - sooo good! D&D is tonight so glad I saved calories all week for pizza :)
