Weight loss is not linear and since you just started losing, most of what you lost on week 1 was water weight. Just keep it up and you will see progress.

I try to aim for the ideal weight for my height since it works out pretty well with my body composition.

Nope, I don't eat them back because I like having a bigger deficit and usually the estimated calories you burn from exercise are incorrect so I don't want to take that risk.
