I don't think its a minor nitpick at all as your post addresses a key issue about long term health and weight loss. The most common result of all diets is that that they all fail long term almost all of the time. Not knowing exactly what form your struggles with carbs make themselves known, I can only suggest to reduce/eliminate all carbs (except low glycemic vegetables) until you are no longer struggling.
