Ha, eggs, my favorite (but hard to get) snack! Today I ate 2 hard boiled eggs, and it felt like a luxury. For lunch, I ate a farro and chickpea bowl with lots of herbs. I have discovered that I really don't miss the olive oil in the dressing at all. I buy wonderful Katz vinegar online, and that makes it with no oil needed.

Hey Belly Flats! Question - is anyone else having an egg shortage in your area? I heard there is a nationwide shortage. I went to our store today, and shelves were 100% empty.
