Also you will burn a lot of calories after a HIIT work out!,I usually count what I burn on my HRM for about the next ten minutes after completion,some say you can count even more.

anything out of the ordinary can be counted,if you clean house everyday you should probably change from sedentary to the next level,or if it's pretty strenuous you could probably count it,specially if you have an HRM. Otherwise,I would just kinda keep it in the back of my head and stick with the norm.

I think 2500 is an amount that is standard and healthy for a diet,good question though,if you are consistently going over by 1000 that is probably a big part of your plateu issue,specially if you are lifting hard. My two cents!
