buy a kitchen scale, it is completely necessary for strict calorie counting unless you only eat things straight out of packages. Cheese, peanut butter, butter, etc. For something like that I'd put the bowl of oatmeal on the scale, turn it on so it's at 0, then spoon in pb until it reaches the amount I've set (usually 10g).

I have been using it less and less, I think mainly because I just know how many calories are in the things I eat now. At my goal weight I will still drop in from time to time to log meals I'm not familiar and check up on my intake if I've lost track.

Heavy weight lifting 3x a week If I'm full of energy and time I'll do cardio on rest days at random, usually some fort of HIIT. The idea of sweating it out in the gym 5 times a week on cardio equipment is really silly to me! But I guess it works for those people.
