I'm reading Wheat Belly as well, might want to look into it. I don't think I saw horrible carbs in your menu plan but its a really good read on why wheat today is not actually healthy. =) I'm on my 3rd day of being grain/sugar free and have dropped about 6lbs but I have a lot to lose though.

I've always used drops. Just make sure that the active ingredients contain HCG 6x, 12x, 30x and 60x else it is not the real stuff.

I have bought Miracle rice to make fried rice using liquid aminos as soy sauce and it was delish. I usually by Shiritaki noodles at the asian market as they are half the price of how you'd pay for the Miracle brand.

Interval is definitely the way to go. In 2007 when I first got a personal trainer I usually just did whatever and he said to do intervals on the elliptical. Building your stamina afterwards for weight lifting too.
