Today's Lunch: Layer one: Green chile chicken enchilada and Brussel sprout slaw with pumpkin seeds and dried mango Layer two: apricots and salad with mixed super greens, red onions, chicken, and a little white cheese. Served with chipotle dressing.

Check out this box. I don't have one so I can't vouch for it (this is sitting in my Amazon cart for the future though) but the price is half of the other ones I have. And they look like nice colors! Pretty lunches guys! I'm all for making your own salad dressings. They taste so much better :)

I think I'm happier and more satiated with a variety of different things too. I've noticed I feel I need to eat a lot more of a single casserole item than a small amount of the same casserole plus a variety of different fruits and veggies on the side. I couldn't eat it all! I still have half of the coleslaw and a tomato. I think this box is too big (even when I stuff it with mainly veggies). Who worried that bentos don't hold very much? That they would leave ya hungry? Oh yes, me ;)

Today's Box: Layer one: shrimp with shrimp sauce, cherries, Romano cheese, and blanched broccoli with some smoked gouda alfredo Layer two: Lemon caper coleslaw and two tomatoes with a little wood smoked salt (found it in the cabinet yesterday :) )

Oh no! Not the cherries! ;) No box for me today as we have the work picnic I've been planning forever. At least those bags and bags of marshmallows with be exiting the office :) Happy Friday!

Very similar box to my last one but with.... cherries!! Layer one-Eggplant Romano with Italian meatballs Layer two- Cherries! and pecorino Romano with a spring mix and tomato salad. Served with Italian dressing. And I'm totally abusing that elastic band today; my two layers of cherries didn't want to fit!

No box for me today; I decided sleep was way more important. I'm a little sad but the awesome news is I found decent cherries last night! I have a container of them for today. Super cherry bento, bwahahaha!

Today's box: Layer one-Eggplant Romano with Italian meatballs Layer two- fresh apricot with pecorino Romano and a spring mix and tomato salad. Served with The Best Italian Dressing Ever (seriously ;) ) I also have a coffee flavored yogurt for some point today, maybe breakfast.

Awesome job! Way to work those bentos! As an aside, I think my workouts are making me hungrier because I ripped into my lunch by ten am today ☺️ And that was after waiting 20 minutes of being hungry and a decent sized breakfast! The good news is that I ate that instead of a mini bag of chips so that is good

Lunch for tomorrow: Layer 1- shrimp with broccoli and tomatoes tossed with Italian dressing Layer 2- salad with spring greens, sunflower seeds, Gorgonzola and mushrooms and strawberries with scratch vanilla bean pudding (not made by me). Salad served with honey mustard dressing.
