I'd say eat some more healthy fats (they're actually supposed to help you lose weight). Almonds, avocado, peanut butter, and other nut-based products are good sources, and they're usually higher in calories. Put some peanut butter on your apples or have some chips and guacamole, and you'll find it adding up.

I never eat back my cals, and I'm just fine. I usually have trouble reaching 1200 (and I burn between 900 and 1200 calories every day in the gym). :P My weight loss is fine (2-3 pounds a week), my energy is normal, and my metabolism hasn't crashed and burned. If you're full, you're full! You'll be fine if you don't eat.

Mile 2. Even if I'm running 6 or 7 miles, the second one ALWAYS seems to take the longest. I think it's because I'm just past that not-at-all-tired-yet stage and just before the I'm-used-to-it-now stage. :P
