Genius! I love Crystal Light and Ocean Spray packets, Greek yogurt, Quaker mini rice cakes in sweet chili or ranch, apples, turkey burgers, turkey meatballs, Sandwich Thins, Skinny Cow truffle ice cream bars, hummus with carrot sticks, and Fiber Plus bars.

Hummus nachos. They are like regular tortilla chip and cheese nachos, but instead of sour cream on the top you use hummus. SOOOOOO GOOOOOOD. I have such a hard time resisting them that I cannot keep chips in the house. Sigh.

Museum's ideas are great! I would add peanut butter and jelly sandwiches, hard-boiled eggs, cheese and sliced apples, raw veggies and low-fat ranch dip, and home-made wraps like chicken with buffalo sauce or turkey with cranberry. Good luck with your classes!

Do you like tuna? I add chopped up carrots to a mix of tuna, a dab of mayo w/ olive oil, salt and pepper. Gives the tuna mixture a nice crunch and adds volume without a lot of calories. Plus I get in a serving of vegetables!

I love all the SkinnyCow products. Low in calories but high in creamy, delicious taste. The sandwiches are pre-portioned so I find it easier to stick to a reasonable number of calories. If you give me a half-gallon and expect me to stick to a serving, yeah right.

I was having the same problem! I started eating 1-1.5C of applesauce in the evening and it has helped tremendously. Plus the applesauce has doubled as a low-calorie sweet treat that has curbed my dessert cravings after dinner. Win all around!

I stop when I am out of calories for the day. Sometimes that is 4pm, other times it is 11pm if I am out at a bar with friends. Just depends on the day and the circumstances.

Love, love, LOVE all these! I like how I can make a bunch on Sunday and then have them for quick, healthy snacks throughout the week. Thanks for the great idea!

Ankle update: Just completed W2D3 today and I am happy/relieved to report that the ankle pain is getting better with each passing day. I have been icing after each workout and doing the strengthening exercises the PP recommended. I no longer have to limp around my classroom- hooray!

Very helpful! I am not running very fast AT ALL, more like kicking my walk up a notch into a shuffle-like jog. I will try the ankle-strengthening exercises tonight when I get home and start working some barefoot walking into my day, as well. THANK YOU!

I throw a sausage, egg, and cheese Lean Pocket in the microwave while I get dressed. When I am ready, it is ready and I eat it on my way to work.

I just started using the elliptical again and found myself dying after 5 minutes. My plan is to add one minute each time I use it until I am up to my goal of 60 minutes. You'll get there.
