A good tip is to combine the splenda with hot liquid if possible so you use less and it distributes more. If you use too much splenda it gives a rather nasty bitter flavour to the food.

I had a corn mug cake that I made using self raising flour, creamed corn and skim sweetened condensed milk.

I had one more chocolate than I intended to today, but worse was yesterday when I had almost twice the amount of chocolate I intended to and went over maintenance by about 100 cal. FML today I gained weight so I am now no longer under my goal weight :P

I didn't lose anything in the first week cause I didn't know how to log things and for the first couple of days I was like "I won't eat like this everyday so it's okay to eat 1300 calories in a single meal." But even when I started making a genuine attempt, it was several weeks before I saw any change.

My dad is GF. Hmmm well I supposed what I should have done since I didn't weigh the tuna before I ate it was checked the percentage of meat there is (or should be) in the can, figure out the amount of oil from that and log the oil... which means (OMG!) I like, drank down at least a tablespoon of oil without even logging it XD
