My husband is also a truck driver. Every Sunday he makes 5 mason jar salads. They have to be layered a certain way (all wet ingredients in the bottom) which I found on pinterest and kept in a cooler. When you're ready to eat, flip the jar over for 5 or 10 minutes to disperse whatever dressing.
