If you're losing weight consistently after 2 months you must be doing something right! Keep it up. About the net calories thing, don't worry about it, your actual caloric intake is still around 1400 and studies show that the body adapts to low intensity training anyways.

How long have you been dieting, you could try taking off 100 calories and see if this kick-starts the metabolism again. Also do you keep your macros constant? Too much sodium can cause you to hold water as well causing your weight to fluctuate

You should definitely eat your exercise calories and depending on your exercise you will need carbohydrates to replenish glycogen and protein to maintain/repair the muscles. As long as at the end of the day you are at a deficit you will lose weight P.s. Be conservative when estimating calories burnt using exercise
