I love almond milk. We usually have at least three kinds in our fridge - unsweetened (for over cereal or straight drinking or smoothies), original for baking with, and vanilla for making my morning oatmeal and tea. Occasionally I will have the chocolate one and it is super yummy warmed with a vegan marshmallow. Perfect for…

^^^This^^^ Same here. Three kids, no meds, two born at home. People think I'm nuts. From car accidents, I'm in chronic pain in my back from the neck to the tailbone. I rarely ever take anything for it and if I do, it might be a few ibuprofen at the very most. I exercise to strengthen my core and my back to help with pain…

I have never liked Paula Deen. I cannot stand her accent and I'm from the south. Actually, if you see some of her VERY old stuff, her accent wasn't nearly as heavy. Even before I dropped meat, dairy, and eggs from my diet, I cringed when I saw her cooking. Way too high in fat. I cannot stand deep fried foods. Yuck. Like…

I'm vegan. My husband and children are omnivores. When I first went vegan two years ago, I asked my hubby if he'd be okay with a meat meal one night, a vegan meal the next. He said yes. But since that time, we have all discovered that the vegan meals generally disappear and the meat meals don't - and no one eats the…

Frozen grapes. Freezing concentrates the sugars and they will satisfy my sweet tooth more than fresh grapes will. Apple slices and peanut butter or even chocolate peanut butter. One square of a good quality dark chocolate. A cup of chocolate soy or almond milk and a vegan marshmallow.

Leftover Green Minestrone that I made last night (Navy beans, green beans, zucchini, and spinach in a veggie broth with a little Israeli couscous) and then a little hummus, carrots, and two baby bell peppers.

I eat oatmeal almost every morning. Old fashioned rolled oats cooked with almond milk. I generally add a cup of a frozen triple berry blend. No sugar because the almond milk is slightly sweet. That's my favorite. Sometimes I'll add pureed pumpkin and pumpkin pie spice. Walnuts and a bit of maple syrup just for the flavor…

Oh, and I'm in. Column 3 for me. I'm making my hubby do it with me. Column 2 for him (only because he was afraid a "girl" might beat him - otherwise I really think he would have wimped out at #7).

I just read the "Daily Beast" article and this sentence immediately stuck out to me: "And what is a sit-up but a back bend done in a lying position?" Okay, perhaps I've done sit-ups incorrectly all my life, but I was a gymnast and did many back bends. In no way is a sit up a back bend done in a lying position. Now, perhaps…

I go ahead and eat one square of a good quality dark chocolate and that usually satisfies my chocolate cravings.

I'm vegan. My biggest concern was iron because I was slightly anemic even before dropping meat from my diet. I shouldn't have worried - even without paying attention to it, my anemia disappeared on a vegan diet and that was without iron supplementation.

Raw carrots in hummus! Yum! My favorite way to eat them! My favorite way to eat cooked carrots? Drunken Carrots. Haha! These were named by my hubby's late grandmother. And she did love them. 2 pounds carrots, sliced thin or cut julienne 2 tbsp butter or olive oil 1/4 cup sweet vermouth OR white wine - both are delicious…

The calorie burn varies so much depending on your class and your height/weight. My little teeny tiny instructor burns about 300 in a 45 minute class. I don't have a HRM (nor would it be accurate on me my fitness instructor says, as I take meds to lower my heart rate), but I did look up the average calories and just used…

Got to love that! Especially in a 9-yo! That's so sweet! My husband loves meat, too, but as I've made new recipes, he has found many that he was surprised he loved. And he is choosing meat less and less. He even took a friend and our adult son out to eat at a vegetarian restaurant while working in Seattle. We had…

My favorite snack is hummus and veggies. Mmmm.... I also love apples and nut butter. Raw cashew butter is my favorite, but a close second is a Target brand almond/cashew/peanut butter.

You do need to be careful of carbs and high fat dairy. Many vegetarian recipes will have one or the other - or both. Beans and lentils are good for you, full of fiber and protein, and they are filling. If you chose a grain, go for a whole grain. Brown rice instead of white. Try other grains, too. Bulghur. Millet. Quinoa.…

What does "kid friendly" even mean? I always fed my children what I ate - whole, healthy, nutritious food. And I expected them to eat it, too. The choice was take it or leave it. I have never made separate meals for my children, beginning from when my little nurslings were sitting at the table with me. They could have a…

I usually am less than 50, too, unless I had a tablespoon of blackstrap molasses to a smoothie in the morning. Then I'm good. I'm not a fan of molasses, but I have become used to it. The drawback - it makes your smoothies look terrible! But it gives me my iron and calcium, so I'll take it.

I just posted about tofu somewhere else on here. :^) My favorite brand is a Wildwood brand of sprouted tofu. I generally buy the firm or super firm. Don't get the silken unless you are going to be pureeing it into something - a dessert or soup or whatever. How I prepare my tofu is this...drain off the water from the…

I'm vegan, 2 years. I have sent you a friend request.

Sounds yummy! I love butternut squash!

My favorite brand is a Wildwood brand of sprouted tofu. I generally buy the firm or super firm. Don't get the silken unless you are going to be pureeing it into something - a dessert or soup or whatever. How I prepare my tofu is this...drain off the water from the package. I slice the block into 1/2 to 3/4" slices. I cover…

Finding some veggie friends on here can be very helpful. My diary is able to be viewed by my friends and I know I will look at my friends' diaries for menu ideas. I've done lots of searching online for veggie recipes and have become pretty good at adapting my own recipes. I'll swap beans or lentils for ground beef, tofu…

I hear those last 10 are the hardest. I've been vegan for two years. When I initially went vegan, I didn't gain weight, but I didn't lose any either. When I started exercising in August, I started to lose weight finally. I am on a heart medication that slows my heart rate and have been told that will slow my weight loss.…

I have a friend who was severely anorexic during high school and college and was hospitalized for it for quite a while. She slowed her metabolism down so much that after having children, no matter what she did, she couldn't lose the weight. Normally, I should say. She still struggles with the old feelings - wanting to be…

I watched the movie and it made me sick! McDonald's disgusts me. I cannot imagine eating all my meals there. I haven't eaten there in years.

Hummus with veggies instead of pita bread. They can bring you cucumbers, tomatoes, and bell peppers at the least. Fattoush salad. Rice-stuffed grape leaves. Lentil soup. Moussaka, while delicious, is made with a bechamel sauce. Definitely not low calorie.

I'm vegan. Feel free to send me a friend request.

I'm a homeschooling mom of three, but I'm on the opposite end of this road from you - my kids are 24, 17, and 15. I've homeschooled since the eldest was in kindergarten (but he did go to public high school). My girls are doing high school at home - their choice. I remember those days of having all three little ones with me…
