Just use plain applesauce and add cinnamon to taste :) Or, if you don`t have applesauce, peel a couple of apples (sweet ones like red or golden delicious and cut into chunks, steam or boil in just enough water to cover bottom of pan until soft, then blend into a puree, then add cinnamon to taste..

I've made this before, fried the "rice" in a pan with a little EVOO and mushrooms, onions and green peas, garlic powder, fresh cracked pepper and soya sauce to make chinese fried "rice"... delicious!
