I will never give anything up I like entirely, but I will slow down my intake. I love to have a soda with lunch every day and I just budget for those calories. I love alcohol so I know that once in a while I'm going to drink a lot and just need to know that those days will be blips on the radar.

I just finished week 6 day 2, going to attack day 3 either tonight or tomorrow, depending on how my shins feel. I find 3 days a week is probably the right amount but I'm training for some long races back to back so I'll probably move to a 4 day a week rotation at some point.

I weigh every morning after I shave before I brush my teeth. I take that day's weight and plug it in to a spreadsheet (as well as MFP) but that spreadsheet calculates the 15 day moving average, which is the only weight I actually look at when it comes down to caring about my weight loss.

Try to make sure you that you only increase your miles about 10% week over week, so if you ran 3 miles this week try not to do more than 3.3 miles the following week and so on. Any other increase could cause serious injury. I'm not an expert mind you, but that's the rule I've generally always gone with.

Daytona is about an hour and a half away from Disney (assuming that's where you are going) and a VERY straight shot down I-4. If you can't splurge from time to time what's the point of living? Weight yourself and see how bad it was and then refocus to get the pounds you just put on right off. Trust me, the ones that just came on will fall off almost as quickly.
