Spaghetti squash! We will have an enormous plate with sauteed mushrooms, onions, bell peppers, and low sodium pasta sauce. We even top it with fresh parm and the whole heaping plate is around 220 calories!

It's definitely possible. Much of the weight you lose in the beginning is from water loss (excess bloat) so the numbers the first week or 2 can be very big. Bolthouse Farms has a line of yogurt dressings (in cooler section by produce usually) that are pretty low calorie and a few are low sodium as well. If you check there nutritional info online you will see they have some healthier choices. For example, there soft shell chicken fresco hard tacos are only like 150 calories each.
