The change to your body happens at rest, not when you are training in the gym. Rest days are crucial to not only progress but to good health too. Training every day takes its toll on your body over time which will lead to injury.

Toning = losing fat. Fat loss = diet. But to have the "toned" look you need sufficient muscle mass underneath the fat. I'd recommend fat loss alongside a good progressive weight lifting regimen.
