It hurts because you're not used to it. It is almost certain that it will hurt less and less over time so you just have to persevere. Exercising consistently is the best way to relieve the symptoms. Good luck :)

Try lots of things you think might work and discard everything that doesn't. You can sit down and throw punches, do upper body weight-lifting exercises etc. Perhaps the nature of your condition might allow you to swim. Good luck whatever you do.

It matters in as much as what you are doing may not be optimal for your goals. However, if you just want to get stronger and don't mind how long it takes then do exercises you enjoy and try to progress the weight, reps etc in some sort of structured way. If you feel better, and are happy with your results then crack on.

Do what you think will bring you the most net happiness. There is no direct harm in eating at maintenance for a period of time, indeed doing so may help you in future.
