I cook my quinoa in broth and then sprinkle Cajun seasoning in it, typically Tony's. I like it. We usually eat that with salmon sprinkled with Tony's as well. My kids love it.

What are you finding hard? Personally I would be starving and likely getting dizzy while working out if I was eating that little. I like my 1500 calories plus my exercise calories. It's working for me.

I am at 1500 plus exercise but I almost always have chocolate everyday. I try to eat more home cooked meals and not much fast food but I am not perfect. Hope you find some people that fit your goals.
