I think this is an accurate assessment. I would also add African influences particularly on "southern" cooking, American Indian (corn meal based foods, the use of pumpkin/squash) and the "islands" influence -- Cuba, Puerto Rico, Dominican Republic, Haiti, etc., Middle and Far Eastern.
