I thought it was 3+ servings veggies, 2+ servings fruit. But, maybe I need to actually measure out a serving of veggies or something. Perhaps I am exaggerating their portion in my head.

Hmm...were you calorie tracking and portion measuring? Doing that for a week or two will usually catch where the extra is coming from. Otherwise, your base metobolic rate might be lower than originally thought. You can lift weights for that. :-)

Hmmm. That's an awful lot of bloating on account of rice. I've never seen rice alone do that. Are you sure it's just the rice? Was there added fat involved like oils, butter, or ghee? I went out of my way to sneak in a 10 minute walk with the dog. That was only about a 1/2 mile. I counted that. It's an extra 50-ish calories for me. I also note that distraction helps a lot. Watch a TV serries, read an awesome book, talk to a friend on the phone, play a game, etc. If after a half hour of distraction and drinking a glass of water you're still hungry, then snag a snack </= 100 Kcal. Then go back to distraction to see if you're good. :-)
