I'm curious, how does one get diagnosed with PCOS? I believe I have many of the symptoms: irregular period (since my teens), facial hair, thinning hair, depression, weight gain. I also have hypothyroidism. I once briefly discussed PCOS with my GP, and asked his thoughts -- he said you probably have it.

I read labels, and don't buy things with HFCS. I made a conscious decision not to buy things with this ingredient. This looks to be a tasty recipe! To the OP, have you ever prepared this without doing the blending bit at the end? It looks like it would be just as good, just more textured, sans blending. Does blending it make it like dal?

Wouldn't it be possible just to take whatever regular Pumpkin Pie recipe you like, and simply prepare it WITHOUT the crust? This is what I do when I make quiche.
