If you Google "Crustless Pumpkin Pie," there are some recipes online that look really good. This is another good low-cal recipe from Weight Watchers:
PUMPKIN FLUFF
1 - 15oz can pumpkin
1 pkg. fat-free sugar-free vanilla or butterscotch pudding (butterscotch is better)
1 c. skim milk
1 - 8 oz. container. fat free Cool Whip
2 tsp. pumpkin spice
Using a mixer, blend pumpkin with dry pudding mix and milk. Fold in Cool Whip. Chill.0 -

Wouldn't it be possible just to take whatever regular Pumpkin Pie recipe you like, and simply prepare it WITHOUT the crust? This is what I do when I make quiche.0
