Mexican brown rice, black bean, and lentil bake. Contains fire roasted tomato, shredded zucchini, and corn. Added a dollop of sour cream and this pup fills you up.

Use a cheese grater and shred any vegetable (I find zucchini the easiest to hide) and throw the shreds in a pasta sauce-- I don't use the shreds to replace my pasta, but as a way to sneak in veggies. Also roasting is my favorite way to cook most vegetables when eating them purposefully. Good luck!

I have been a pescatarian for about 20 years. I eat fish about 2-3 times per week, but most of my protein comes from everything else that others have mentioned already (beans, beans, beans.) Yesterday and today were both classic Pure Barre for 50 min. After this weekend (family coming into town) I am hoping to get a year long pass to a local park (not national park, so they are open) to start hiking on some of their tougher trails a few times a week instead of just randomly.
