Dinner last night... Ratatouille, baked. I get the recipe from Vmacandcheese.co m. It's so good with sliced eggplant, zucchini, squash, tomato and onion and topped with asiago cheese. We also had grilled chicken and Red Quinoa with it.

I make this banana-blueberry smoothie for breakfast a lot. I add 2 cups Wymans frozen blueberries, 1 banana, Chobani banana greek yogurt, 1 cup raw baby spinach, 8 - 10 almonds, Silk almond milk (30 cal.)... I just pour it in, maybe 1 to 1-1/2 cups, and add it all to my "Ninja" blender.

Here's what I made for dinner tonight. I cut a chicken breast in half, pounded it flat, and marinated it in a balsamic dressing, then grilled it and laid it over a salad with baby spinach, romaine lettuce, tomatoes, cucumber, sliced strawberries and slivered almonds.
