Yes, I'm the same way, which is why I only eat two meals a day. You might want to look into Intermittent Fasting. You gotta do what works for you.

If you're having this much trouble with it right off the bat, do you really see yourself being able to maintain this diet in the long run? And if you can't, what's the point of doing it now? Why suffer unnecessarily? If low carb isn't something you enjoy and are able to adhere to, there's no need to do it. Eat some carbs.

Meal timing doesn't matter. Do what works and is sustainable for you. I am not a breakfast person at all - I feel nauseous if I force myself to eat something as soon as I wake up. So I do IF. I wake up around 10 and eat my first meal around 2 or 3. It's worked very well for me.

I'd say eat more. I have never plateaued when on plan, and I've always stayed between 1500-2200 calories (depending on exercise and hunger) throughout my loss. I lose 1.5 pounds a week on average without really trying too hard (I do work out a lot though).

Start with a weight that is challenging but not impossible. You should be able to do at least 8 repetitions with it keeping good form. I started out with ten pound dumbbells.
