DOn't fry! Rinse, pat dry, dip in beaten egg then into breadcrumbs seasoned with anything you like (I use seasoning salt) Bake at 350 till chicken is cooked through (no pink juices running when cut, clear only) Serve with tzatziki or (mix 1tbsp each of honey, mustard and LF mayo)

I like veggies for breakfast sometimes I stir fry a batch for the week then have them at dinner oro for breakfast with a protein (Chicken at night, eggs in the a.m. but you could do a meat (lean ham for example) or with either meal, soy)

According to MFP, I eat a LOT of protein- keeps me full (tuna, lean beef, chicken, etc) and I get lots of veggies, too, to keep from getting, um, "blocked" from all that meat
