I second the seeing another doctor thing. It seems off that you cannot eat more than 1300 calories without having bloating problems. Have you gone in for allergy testing ever? There might be something besides gluten that's causing problems.

It happens to me, I have a stronger reaction to the caffeine in coffee than say, in tea. It's worse if I'm really tired or if I haven't eaten. It's one of the reasons I drink large quantities of tea.

Are you in school? If so, you should have access to at least a guidance councilor through the school who can refer you to someone who can help out. For example, there was a coach at my school who helped students develop healthy eating plans, so while that might be the absolute best option, it might be a good place to start.
