Sounds delish. What do you use for vinaigrette? I just had a snack of one of my faves: toasted wholemeal (wholegrain) pita with cream cheese, chives, and smoked salmon on top. Yum.

If you put a tortilla topped with a bit of tomato paste, a bit of reduced-fat cheese and toppings in a dry skillet until the cheese melts a bit and the bottom is toasted, it makes a really good substitute.
