Doctors are not educated very well in nutrition. Nutritionists yes, find a vegan nutritionist if you are worried. It is not a highly restricted diet.

Protein powder = processed useless crap. Just eat real food. I'm a vegan and I can easily get mine through quinoa, lentils, beans, peas, all the veggies, all the fruits, all the grains.

I dont know, I threw my scale out. I just go by how the clothes fit. It's probably water retention. But it would be good to do so you can figure out how your body fluctuates with TOM and certain foods like sodium.

Up your calories. You can't expect to gain muscle on a defecit. Even if you are trying to burn fat there is a line where the body just holds onto it. Build muscle and do hiit cardio. Or combine them.

Honestly I would stay away from 1200 calories. You could probably eat more and still lose weight. It will be slower in progress but it will be a more lasting weight loss.

Bad advice is bad. You can't "kill" metabolism. You can restore it by slowly refeeding your body/upping calories. It sounds pretty scary but it works long term. I find plyometrics (things like insanity, body rock, loving fit, ect.) mix both up in short amount of time. So if you love cardio then alternate days. One day hiit/plyo and the next bike or something.
