I have a similar issue with my current job (no lunch break die to understaffed). I just make bars and bring them in and eat them randomly.

Make your own food. I'm vegan and a lot of premade food is expensive. I'll buy dry beans and wheat gluten flour for seitan, frozen veggies, ect.

You weighed yourself in the evening. Water retention. Eating less can sometimes lead to weight gain long term...I know that one sounds crazy. Especially when there's a past of ED, the body retaliates and reacts to it because it wants to live.
