Costco is pretty helpful for this-- sucks the week that I buy in bulk, but we eat out of the freezer for the rest of the month. It works out pretty well.

I cut an acorn squash in half, scoop it out, add oil to the center and rub it on the edges (coconut or butter) and dump cinnamon all over it. Bake at 350-375 until squishy. I make rings out of tinfoil to hold it upright in the oven.

I don't think my thyroid will be fixed by diet alone, but I can alleviate some symptoms of Hashimoto's a la Cerberus. I've been on levothyroxine since I was 16 and just recently, liothyronine and selenium-- those are already improving my hair (woot!). I doubt I'll ever be off them completely, but that's fine.

I use almond milk or coconut milk, depending on my preference. I make my own protein powder blends at truenutrition.com. What I'm using currently is an egg white/whole egg/stevia mix. I use them to ensure I get food in during crazy days.

I really don't like spaghetti squash-- it's a huge texture issue for me. Also, I don't think cucumber would hold up well in a cooked pasta dish (and the texture's kind of gross too).

Look for the Clean Program manual-- don't worry about the expensive shakes, but it's a very good total elimination diet and it really helped me figure out what was going on. I now eat Paleo (which is pretty close to what I ate on the elimination diet, minus the grains, since they don't agree with me) and it's working great.

Same-- feel free to add me. I started on this about a month ago when my ND suggested I give up grains (stupid Hashimoto's) and minimize carbs (PCOS). At any rate, I haven't lost any weight, but I'll take the inches that I've lost happily! I work out at least 3x week/weights, some cardio.
