I graduated today! My W9D3 time was 29:32, which I'm very proud of as it was my goal to run a sub-30 5K before the end of the year. I'm going to keep running every other day, and work on gradually improving my speed.

When I was vegan I liked to fry up chickpeas with onion, garlic, spinach and plenty of harissa paste. Meat free bolognese is easy to batch cook.

I make a lazy snack version with a tortilla folded over, a small amount of tomato puree, jalapeños and about 25 grams of cheese, toasted on a grill. It ends up being about 350 calories, it's not exactly authentic but it satisfies the craving!
