I eat plain 0% liberté greek yogurt with either fresh or frozen berries mixed in (frozen makes it seem like frozen yogurt). Any sort of flavoured yogurt really isn't very good for you as it's really high in added sugars. Adding your own toppings (like fruit, nuts, a little bit of honey) is a lot better for you. :)

I say push through. Even though you are sore and won't be performing quite as powerfully as normal, it's still better than nothing. Following the schedule is a fairly important part of insanity.

I weigh myself sporadically but when I do it, it is always after a get up, after I go to the washroom, before I eat or drink anything. That way I can be as consistent as possible. I don't like soda or hotdogs. I could easily do without ever having chips again. There are lots of candies I don't like either. Processed cheese is disgusting! Especially when its spreadable! Blech

Eat more protein! I try to get at least 120g a day, usually more. You should try to get 0.8 to 1g of protein per pound of body weight.

Make sure you guys are eating natural peanut butter and not stuff with all the added sugar. Find one that only lists peanuts as the ingredients. I eat PC Organics Smooth Peanut Butter :)
