I usually eat 30-40g/ day on a 1600 calorie diet. Fiber is good for you. Good for bowel health, feeling satiated and if you are getting lots it's a good indicator that you are eating a healthy diet. Just remember to drink lots of water to help flush it through your system.

While fruit is healthy because it contains fiber and vitamins, it is also high in sugar. Sugar is sugar regardless of where it comes from. Perhaps you could swap a non-starchy veggie or protein as a snack? Celery and nut butter? Chicken breast? Tuna? Whatever works for you. Good luck!

How much are your going over carbs? What is your total amount? Or more importantly, what is your total percentage? I like to keep mine between 30-40% of total nutrients. It will help keep your insulin levels stable and promote fat loss and fat utilization.
