And add some strength training to your routine ;) Starvation and cardio isn't going to give you the shape you want.

Measuring monthly is a good start. Week to week, you'll just torture yourself because you're not going to see massive changes in that time. The calorie burn you find in the search for "strength training" is very general and I don't think it's specific to you. Not sure it's going to give you the numbers you're looking for :(

Except plateauing would infer that you're making no progress. You said you're making progress in terms of your body composition. So, you're not on a plateau ;)
