I used to try 1200 and it was nearly impossible even when eating almost entirely clean and vegan. I almost always felt hungry, too. Now I try to stay around 1500-1700. Even if my weight loss is slow, it's more likely I'll stick to it longer because after a few weeks of less I'd get too burnt out.

As others have mentioned, cinnamon or brown sugar. You can also make a sweet potato bake (roasted with cinnamon, nutmeg, and brown sugar, I made some last night with squash), mashed sweet potatoes, sweet potato and black bean quesadillas, ect. ect. Google it and you'll find a million ideas.

Don't worry about offending them. It's your body. If someone was offended that I wouldn't eat their fried chicken, I don't care. You don't have to be rude and turn your nose up just politely skip over it. If it really bothers them and gets brought up just explain to them that you aren't a big meat eater.

Dry beans are cheap and go a long way. Also, look into finding a food co-op in your area. You can help by working there for a short amount of time and get food in exchange. I use a muffin tin, too, and make mine with egg beaters, broccoli, and cheese. I love it! You can put them in the fridge and heat them up in the morning to have for a few days.
