I leave my eggs in the mold all the time. The trick is to put the mold in a sealed container. Sometimes if the egg feels like it's going to be tough to get out, I open it underwater.

Depends on what's in them. Today's lunch for example was frozen this morning, but I put it my box frozen and by lunch it was thawed. Back on the bento wagon! Today's lunch is leftover sesame chicken from last night's dinner, jasmine rice, tri-color carrots and some kind of mochi thing (packaging is in Japanese :lol: ) Calories are kinda unknown as I did not make the sesame chicken. My guess is around 560 cals.

I've only had jicama raw, I would think it would have the same hang time as a carrot, the edges might get a little dry, but otherwise it should be fine. So far the only thing I didn't like in my bento after it sat around all day was cut red plums. They got kind of gross.

Yay for bento! I found 5 minutes to rub together so I got a chance to make a bento for today! Lunch box has mixed rice (kinda gluey, did something wrong here), lobster flakes, cocktail sauce, edamame and a crunchy sesame thing. Snack box has vegetable thins crackers, a cheese stick, a non fancy egg & a kiwi.

This website is a great resource. I don't freeze my rice in plastic wrap, I use 1 cup size gladware containers and it works fine. I pack it hot, stick it in the freezer and nuke it when I'm ready to eat it or pack it.

Ah, so many bentos look so tasty! I haven't had time to mess with my bento (I'm still a super slow preparer) but I've still been eating pretty lunches. Here's today's for example: Tangerines, strawberries, a shaped egg, a brie and roasted almonds.

I actually toast it a bit over an open stove burner before making sushi with it, but I don't think you *have* to do anything special. I had read that in one of my sushi cookbooks that the author likes the toasted taste. When I've over toasted them, they became like SeaSnacks, but maybe the oven would be better for that.…
