I put on weight (muscle) like crazy when I was doing high intense interval training. I had to stop because it was wreaking havoc on my adrenals. The number on the scale usually means water retained by the muscles.

I gained weight from weight lifting but no one can tell. Don't weigh yourself after starting a new exercise regimen. The scale always goes up for some reason.

Fellow somewhat low carber here (i eat more carbs on exercise days). You're wayyyyyyy below your calorie needs, especially if you're burning so much. I have celiac. I can eat dairy, but I don't tolerate grains (not even rice). I eat the canned pumpkin for breakfast with some cinnamon. You can do this along with some almond milk in a cup.
