You might try to gauge based on how clothes look and feel...try on a pair of pants that might feel a little tight and then try again in a few weeks...I'll bet you'll notice a difference. Just because you don't feel it right away doesn't mean it's not happening!!! Good job on 15 pounds.

Sounds like you may need advice from a nutritionist and/or medical doctor. Any chance you can eat/drink smoothies, protein shakes, protein bars and the like over the course of the day?
