LOVE Quinoa! I make it in a rice cooker - equal amounts water to quinoa. I always add cut up veggies - oninon, carrots, broccoli, zuchini, whatever I have and they all cook together. I like to add flavorings like low sodium bullion or herbs, and it comes out like a rice pilaf. Spray a little butter spray on it - YUMMY!

Grape Tomatoes are like CANDY right now - so sweet! Keep them at my desk all the time. Also, English Cucumbers are amazing - love the fiber with the edible skin. Yum!

Congratulations! You are a HOOT. For the record, I had colon cancer at age 43 and am now fifty, the age when you first get screened. I'd probably be dead without the first colonoscopy at 43! Definitely wasn't OLD then . . . guess 50 qualifies for old, but I still feel 19! Go figure.

Once per month - I am a scale addict and I let that number, good or bad affect how I view my day. Sad I know, but when I weigh in, I KNOW there will be a great and motivating loss. Looking at your diary, you aren't eating any fruits or veggies, and not enough water. May be too many processed foods. Try eating clean for a week - I bet you see a huge difference. Good Luck!

I eat TONS of raw veggies cut up. Favorites are grape tomatoes - I take at least 2 cups of them to work with me. They are sweet and fun to eat. Boca Burgers - 100 calories each on a light hamburger bun, a little ketchup, mustard & veggies - very portable for work. Just microwave for a couple of minutes and its done. Yum!

Fyi a Diabetic eating plan is VERY healthy and balanced. Not something to be wary of, but a great way to get good carbs and lean proteins into your diet. Even sweets - its about watching carbs not sugar. Good Luck!
