i add chopped zucchini, broccoli, mushrooms, bell peppers etc. spinach etc. and put them in my omelets. i also add some zucchini and even butternut squash in my spaghetti sauce soups etc. will be watching this post for more ideas too. great question.

drain and rinse your red kidney or any other bean for that matter and add small amts at a time to your salads. rice and beans are great. seasoned black beans. i am sure you can find something that will work for you. i add black beans to taco meat and we love it.

Prepare something the night before. You could take a couple boiled eggs, some granola, string cheese, some raisins and nuts, a protein bar and some fruit. If you make an effort to prepare the night before, I think you will be surprised at what you can be satisfied with at work.
