Hi and welcome! I eat a "whole foods + protein powder" diet and am gluten free, and haven't had any trouble making this work. :)

I don't have any tips for getting back on the wagon cause I kinda suck at that. :) But as far as the damage goes, chili, peanut butter, and nuts are really not that super high in carbs. You could have done a lot worse! :)

I really like stir fry for both breakfast and lunch...meat, veggies, soy sauce, ginger, garlic, maybe a scrambled egg. If you can have some carbs you can toss in a little rice.
