This might be a muscle gain issue. Or you could have weighed your self at a different time of day. Remember you will weigh less first thing in the morning than at night. Wait 2 hours after eating. I am working on a 150 calorie personal size crust about 5in. Found a basic recipe on a low carb site and want to adjust the amounts of ingredients to lower the calories!

I use eggplant as spaghetti noodle replacement. I have a slicer that will slice the eggplant into fine strips and I used to use a cheese grater before that. Steam then cover with homemade sauce. I like the taste of this now better than regular noodles.

I love this for mashed potatoes. They hold a lot of moisture so I think your idea of putting some shredded cheddar in them sounds like it can thicken then up a little. Are you going low carb??
