I've learned to love (good quality) black coffee, so there aren't a lot of calories there. Cappucinos and lattes (sans syrups) are also low-cal. I'm much shorter than you (5'2), around 162# and I net between 1500-1600 calories. I care more about fat loss. I haven't lost much weight (about 25# total, 2 since MFP), but I have lost a crap ton of inches. All of my clothes are now about 4 inches too big all around, except for the stubborn chest area >:(

You have to log all. the "little stuff" adds up very, very quickly. The act of recording changes people's behavior. Having to log that bite or bit of candy might make you change your mind. Yes, your tastes can change. I've developed a much more sensitive palate. I've been trying to eat within a lower sodium diet and foods that I used to love now taste too salty to me. I've never really had a sweet tooth, but low-quality ice cream tastes revolting sweet to me.

Not sure about weight memory, but there is definitely some debate around "set point theory" or the idea that there is a comfortable ratio of fat that your body is comfortable with and tries to maintain.
