For road riding you will probably be more comfortable and be able to ride longer on an actual road bike. Instead of 23's use 25's? Or start with an upright hybrid with 32cc tires. A hardtail mtn bike might be a tad unwieldy for road riding.

I would try the clip-ons for the TT, but (at least where I ride) aero bars are a definite NO NO in a paceline. Too sketchy. Good numbers on your TT time also, well done!

I would suggest adding some glutamine to your recovery shake. I use it and I SWEAR by it! I ride a lot and it's really really rare for me to have soreness in my legs. and I do a LOT of cycling. It's pretty much the first place I lose also, and I don't have much to lose in that area...now my hips and tummy, that's another story. However, I don't mind the loss because I feel like smaller boob-age is attractive and goes well with an overall fit, lean, athletic look which is one of my goals as far as aesthetics.

I read something about cheese once and it stuck in my brain as true....."Think of cheese like modified butter" It's ok to eat butter, but you will be in trouble if you eat a whole stick. Used in moderation and as more of a garnish rather than the main course, it's fine.

I would say that's a bad thing. Fat is essential for a healthy body, obviously too much fat is bad thing though. Have you tried coconut oil? It's vegan and quite tasty.
