I'm not a Vegan but I'm trying to add more Vegan meals to my week. I have to be very careful with fat because of an issue. Any suggestions on good online reading on how to balance nutrition while getting enough calories? I'm trying for 1500 a day and it's hard even if eating meat or seafood.

Try putting cooked oatmeal in a smoothie, it adds nutrition and gives a nice creamy texture. I didn't care for oatmeal as a child because I was always served soupy rolled oats. Once I discovered steel cut oats I really like it. The steel cut have more substance and a richer flavor in my opinion. Maybe if you try it with a…
