Don't worry about the pounds gained. If they went up that much so quickly, they can easily come off that quickly. It is most likely just weight from glycogen which you can drop with low calories and lots of water! I hope you feel better soon!

First day I ate 1000 calories, but yesterday I ate very lightly, just around 600. Currently at around 700-800 today. I will be changing to take in about 1200 calories a day to get on a normal healthy diet. Thanks for the advice!

You will learn to just love water! See it as hydrating your body and giving you energy. I think it tastes great and refreshing. Whenever I get hungry throughout the day, I just drink more water! I used to interpret dehydration as hunger which would lead to lots of snacking!
